    Ingredients

    • 1 tablespoon Olive Oil
    • 2 slices bacon, chopped
    • 1 tablespoon crushed roasted garlic
    • Pinch of red pepper flakes
    • 2 Baby Portabella mushrooms, sliced
    • 2 handfuls baby spinach, washed and drained
    • Cooked Couscous, enough for two servings
    • 1/4 cup Tomato & Basil Feta Cheese, crumbled
    • salt to taste

    Note

    Quick Tips

    When making the couscous, use chicken stock in place of water for more flavor.

    Great accompaniment to chicken shish kabobs.

    Directions

    Step 1
    Put olive oil in pan. Add bacon. Cook til crispy.
    Step 2
    Add garlic, red pepper flakes and mushrooms. Stir about a minute.
    Step 3
    Add baby spinach and continue stirring for another minute or until spinach reduces.
    Step 4
    Stir in cooked couscous and mix well.

    Salt to taste.
    Step 5
    Top with Feta cheese
