Ingredients
- 1 tablespoon Olive Oil
- 2 slices bacon, chopped
- 1 tablespoon crushed roasted garlic
- Pinch of red pepper flakes
- 2 Baby Portabella mushrooms, sliced
- 2 handfuls baby spinach, washed and drained
- Cooked Couscous, enough for two servings
- 1/4 cup Tomato & Basil Feta Cheese, crumbled
- salt to taste
Note
Quick Tips
When making the couscous, use chicken stock in place of water for more flavor.
Great accompaniment to chicken shish kabobs.
Directions

Step 1
|
| Put olive oil in pan. Add bacon. Cook til crispy. |

Step 2
|
| Add garlic, red pepper flakes and mushrooms. Stir about a minute. |
|
Step 3
|
| Add baby spinach and continue stirring for another minute or until spinach reduces. |
|
Step 4
|
Stir in cooked couscous and mix well.
Salt to taste. |

Step 5
|
| Top with Feta cheese |
