• Spicy Chili Cheese Brunch Dish

    Ingredients

    • 8 corn tortillas
    • 2 large eggs
    • 1/3 cup all-purpose flour
    • 1/2 teaspoon Salt
    • 3 large egg whites
    • 32oz small curd cottage cheese
    • 1 12 oz. can chopped green chili
    • 1 cup prepared chunky salsa
    • 1 4 oz. can chopped jalepinos

    Directions

    Step 1
    Preheat oven to 350 degrees. Coat a 13″ baking dish with cooking spray.
    Step 2
    Toast Tortillas by placing them one at a time directly on a burner at medium heat. Toast, turning frequently with tongs until golden about 30 to 60 seconds. Cut tortillas into 1″ strips.
    Step 3
    Whisk 2 whole eggs and egg whites until smooth. Add cottage cheese, Cheddar cheese, chilis and tortilla strips and mix with spatula. Pour into the prepared dish. Bake 40 to 50 minutes until set in the center and golden on top.
    Step 4
    Let cool for 5 to 10 minutes. Cut into squares. Serve with salsa.
