Variation: You can add any other breakfast meat. You can use them instead or with sausage. Ham, bacon, chorizo, italian sausage, are most common. You can also use any of your favorite cheeses.

| Place sausage in a large, deep skillet. Cook over medium-high heat until evenly browned. Drain and set aside. | |

| Layer bread cubes, sausage and Cheddar cheese in a lightly greased 8×8 baking dish. | |

| In a bowl, beat together the eggs, milk, salt and pepper. Pour the egg mixture over the bread cube mixture. Cover and refrigerate at least 8 hours or overnight. Remove the casserole from the refrigerator 30 minutes prior to baking. | |

| Preheat the oven to 350 degrees. Bake for 30 to 45 minutes or until knife inserted into the center come out clean. Let stand for 10 minutes before serving. | |
