• Saucy Stuffed Peppers

    Ingredients

    • 1lb Ground Beef
    • 2 tablespoons long grain Rice
    • 2 tablespoons Yellow Onion, minced
    • 1 tablespoon each Celery Salt, Onion and Garlic Powder
    • 1 teaspoon Black Pepper
    • 4 large Green Bell Peppers, cut top off, halved and seeded
    • 1 tablespoon Canola Oil
    • 1/2 quart Vegetable Juice
    • 2 cups Water, as needed
    • 1 tablespoon Beef Bouillon or Base
    • Salt and Pepper to taste
    • 4 servings Mashed Potatoes, homemade or box

    Directions

    Step 1
    Knead first 5 ingredients until well blended together. Separate into 8 servings. Stuff Bell Peppers with meat mixture.
    Step 2
    Heat oil in 2 qt. Pot over medium heat. Add stuffed peppers and carefully brown on both sides approx. 5 minutes on each side. (Keeping meat inside peppers.) Continue to heat stuffed peppers with pepper side down, add the last 4 ingredients. Simmer 20-30 minutes. Sauce should be saucy and not too thick.
    Step 3
    Meantime, make your Mashed Potatoes.
    Step 4
    Serve Stuffed Peppers along side of Mashed Potatoes and ladle sauce over top of both.
