    Ingredients

    • 1 cup butter, softened
    • 2/3 cups granulated Sugar
    • 1 egg
    • 1 1/2 teaspoon Vanilla extract
    • 2 1/2 cups all-purpose Flour
    • 1/4 teaspoon baking soda
    • 1/2 cup Semi-Sweet Chocolate Chips
    • 1 Egg Yolk
    • 1 teaspoon Water
    • 1/8 teaspoon Salt
    • 1/2 cup Mascarpone Cheese

    Use a 1/4 c. each of melted White and Dark Chocolate Chips to drizzle on each Ravioli.

    VARIATION:  Use 1/2 tea. of your favorite fruit Preserves for Ravioli filling.

    Directions

    Step 1
    In medium bowl, cream together butter and sugar.
    With electric beater, on low-medium speed, add egg, and extracts and mix until well blended. Stir your dry ingredients together and add to liquid mixture. Dough should be smooth and dry. Add a little flour if dough is sticky. Divide dough in half. Roll each half between 2 pieces of wax or parchment paper. Make a 12″ square.
    Refrigerate for 1-2 hours.
    Step 2
    Preheat oven to 350* Grease or spray a large baking sheet.
    Step 3
    Beat egg yolk and water together with wire whisk.
    Step 4
    Remove paper from one portion of dough and cut into 2″ squares. Spoon a 1/4 tea. of Mascarpone Cheese and 1/4 tea. of Chocolate Chips in the middle of each square. Remove paper from second portion of dough and cut into 2″ squares. Pierce each square with a fork.
    Top each filled square with dough and pinch sides to seal.
    Step 5
    Place squares on baking sheet approximately 1-2 inches apart. Brush with egg mixture. Bake for approximately 10 minutes, or until lightly browned.
    Drizzle each square with melted chocolate. You can melt each separate or together and swirl.
