• Pork Green Chili

    Ingredients

    • 3 tablespoons oil
    • 2lb Pork Shoulder or Butt, diced
    • 1/2 cup All Purpose Flour
    • 1 Onion, Diced
    • 3 lg. Garlic Cloves, diced
    • 4 cups Water, and as needed
    • 1 4 oz. canned diced Jalapenos
    • 30oz canned or frozen diced Green Chili’s
    • 3/4 cups canned Diced Tomatoes, drained
    • 1 tablespoon Onion Powder
    • 1 tablespoon Garlic Salt
    • Salt and Pepper, to taste

    Optional

    • 4 roasted Hatch Green Chili’s, diced

    Directions

    Step 1
    Heat oil in large pot for 3 minutes over med/high heat. Add diced pork. Stir occasionally for 5 minutes. Add onion and garlic and saute until browned. Set aside.
    Step 2
    Heat 2 tbl. oil to pot and stir in flour and saute until golden brown. Stir in water with wire whisk until smooth. Add meat mixture and the rest of the ingredients. And again, stir, to prevent scorching. Bring to boil and simmer for 1 1/2 hours. Or until tender and thickens. Stir occasionally.
