Irish Stew

Ingredients
- 2lb stewing Beef or Lamb
- 1 cup all-purpose flour
- 1/4 cup oil
- 3 stalks Celery, sliced
- 3 Carrots, peeled and sliced
- 1lb Red Potatoes, quartered
- 1 small Onion, diced
- 2 cloves garlic
- 2 Bay Leaves
- 1 tablespoon each dried Thyme and Parsley
- 2 tablespoons Beef base or bouillon
- 2 tablespoons Celery Salt
- 2 tablespoons Onion Powder
- 1 bottle dark Beer
- 2 cups Water and as needed
Note
Add dumplings, if desired.
Directions

Step 1

Dredge meat in flour and shake.
In large pot, heat oil and add meat.
Brown meat, add stir in all ingredients, except beer, celery, carrot, potatoes.
Bring to boil and simmer about 1 hour until tender. Stirring ocasionally
Add Beer, Celery, Carrots, and Potatoes
Bring to boil and simmer for 30 minutes or until tender and thickened.
