• Irish Potato Soup

    Ingredients

    • 3 Potatoes, peeled and diced
    • 2 Carrots, peeled and diced
    • 2 stalks Celery, sliced
    • 1 small Yellow Onion, Diced
    • 1/2 stick butter
    • 1 cup Water from boiled potatoes
    • 2 cups milk
    • Salt and Pepper to taste

    Note

    I also like to add 2 tbl. Bacon grease for flavor

    You can also use Half and Half or Heavy Cream to replace Milk.

    Change to: 1 c. Cream and 2 c. Water

    Directions

    Step 1
    Add potatoes to a large pot and add cold water to cover just above potato.

    Bring to boil and simmer for approximately 30 minutes or until just cooked. Do not overcook.

    Drain water and reserve 1 c. of water.

    In same pot add butter, carrots, celery and onion. Saute until tender.

    Add the remaining ingredients. Bring to a boil and simmer until thickened.
