• Ham and Cheese Muffins

    Ingredients

    • 1 large egg
    • 1 cup milk
    • 1/3 cup Mayonnaise
    • 2 1/3 cups all-purpose flour
    • 6 strips bacon, cooked and crumbled

    Note

    Strip bacon can be substituted for Canadian Bacon.

    Directions

    Step 1
    Preheat oven to 400 degrees. Spray 12-cup muffin pan with cooking spray or line with paper liners.
    Step 2
    Lightly beat the egg in a large bowl. Add milk, mayonnaise and baking mix. Stir until moistened. Fold in bacon and cheese.
    Step 3
    Spoon batter into prepared muffin pan, filling each cup about 2/3 full.
    Step 4
    Bake 18 to 20 minutes or until muffins are golden brown. Let cool slightly and remove from pan.
    Serve warm.
