• Edamame Salad

    Ingredients

    • 3 16 oz. bags frozen Edamame
    • 2 15 oz. canned Black Beans, rinsed and drained
    • 2 15 oz. Garbanzo Beans, rinsed and drained
    • 1 Yellow, Orange and Red Bell Peppers, small dice
    • 1 small Red Onion, small dice
    • 1 cup Rice Vinegar
    • 1 tablespoon chopped Ginger or 2 tb. dry Ginger
    • Salt and Pepper to taste

    Optional

    • 2 teaspoons toasted Sesame Seeds

    Directions

    Step 1
    Thaw edamame in refrigerator overnight. Add to medium sized bowl, your edamame, beans, peppers and red onion.
    Step 2
    In small container with air tight sealed lid, add vinegar, ginger and sesame seeds.

    Tightly seal with lid and shake for 1 minute.

    Add dressing to salad.

    Salt and pepper to taste.

    Blend well.

    Refrigerate 15 minutes before serving.
