Edamame Salad

Ingredients
- 3 16 oz. bags frozen Edamame
- 2 15 oz. canned Black Beans, rinsed and drained
- 2 15 oz. Garbanzo Beans, rinsed and drained
- 1 Yellow, Orange and Red Bell Peppers, small dice
- 1 small Red Onion, small dice
- 1 cup Rice Vinegar
- 1 tablespoon chopped Ginger or 2 tb. dry Ginger
- Salt and Pepper to taste
Optional
- 2 teaspoons toasted Sesame Seeds
Note

Directions

Step 1

| Thaw edamame in refrigerator overnight. Add to medium sized bowl, your edamame, beans, peppers and red onion. |

Step 2
|
In small container with air tight sealed lid, add vinegar, ginger and sesame seeds.
Tightly seal with lid and shake for 1 minute.
Add dressing to salad.
Salt and pepper to taste.
Blend well.
Refrigerate 15 minutes before serving. |
