Ingredients
1 tablespoon Butter
1/2 cup onion, diced
1/2 cup green pepper, diced
1/2 cup mushrooms, sliced
1/2 cup bacon, diced
4 eggs, lightly beaten
To TasteSalt and pepper to taste
1/2 cup Roma tomatoes, diced
1/2 cup freshly grated Parmesan cheese
1 tablespoon chunky salsa (optional)
Note
Can substitute catsup for salsa.
Directions
Step 1
Melt the butter over medium heat in a medium skillet. Add the onion and bell pepper; cook and stir until the onion is transparent, about 5 to 7 minutes.
Step 2
Stir in the mushrooms and bacon and cook 2 minutes longer. Add the eggs. Cook and stir gently just until the eggs are soft. Season with salt and pepper. Cook the eggs until firm.
Step 3
Remove from heat and stir in the tomato and cheese.
Stir in the salsa, if desired.
