    Ingredients

    • 2 tablespoons oil
    • 1 Onion, julienne
    • 3 cloves Garlic, chopped
    • 3 Roma Tomatoes, large dice
    • 4-6 roasted Hatch Green Chili’s, large dice
    • 2lb cooked Beef Roast, shredded
    • 2 cups Water, and as needed
    • Salt and Pepper, to taste

    Optional

    • 2 tablespoons El Pato Jalapeno Salsa,

    You may use any type of green chili. Big Jim’s are from New Mexico, they have a great flavor and are very spicy. Which ever chilis you use, I suggest roasting them and remove the seeds.

    Directions

    Step 1
    Heat oil in large skillet over medium heat for 3 minutes. Saute your onions for 5 minutes or until tender. Stir in garlic and tomatoes and continue to saute for 5 minutes.
    Add remaining ingredients to skillet, cover and simmer for 20 minutes or until sauce thickens. Stir occasionally to avoid scorching.
