• Brandied Peach Pork Chops

    Ingredients

    • 4 boneless center cut Pork Chops, marinated
    • 4 tablespoons Olive Oil
    • 1/4 teaspoon Paprika
    • 2 teaspoons garlic powder
    • 2 teaspoons Onion Powder
    • 1 teaspoon dried Italian Seasonings
    • 2 teaspoons Salt
    • 1 teaspoon black pepper
    • 2 - 3 tablespoons Butter
    • 1/2 cup Yellow Onion, small dice
    • 1/2 cup Thyme, finely chopped
    • 1/2 cup Brandy
    • 1 10 oz bag of frozen Peaches, thawed
    • 1/2 cup Peach Preserves
    • Salt and pepper to taste

    Cooking time may vary for pork chops, depending on preference. We sometimes tend to over cook pork until it becomes dry and tough.

    For the WOW factor, you can sprinkle approximately 1 tablespoon of Brandy over top of pork chops and sauce. Then quickly ignite with a long lighter or match. Never stand over plate as flames will shoot upward. If you’ve never done this before, you should consider practicing first.  You might want to keep a fire extinguisher handy for the person you’re cooking for…

    Directions

    Step 1
    Add marinate to a gallon size Ziploc bag.
    Scrunch bag until seasonings are well blended.
    Add pork chops and zip up bag. Move pork chops around inside bag until well coated. Set aside for 20 minutes.
    Step 2
    Heat large skillet over medium heat and coat with pan spray, for approximately 3 minutes. Remove pork chops from plastic bag and carefully place in heated skillet. Sear both sides for approximately 5 minutes on each side or until they reach an internal temperature of 155*. Remove pork chops and set aside on a shallow pan. Loosely cover with foil to keep warm and will continue cooking
    Step 3
    Carefully add Brandy slowly to skillet and stir.
    Brandy will ignite when introduced to flames, you’ll want to save that until later. Stir in peaches and preserves. Continue cooking for 3-5 minutes or until peaches are tender, but not macerated.
    When plating your pork chops, you may add the juices to your peach sauce.
    Step 4
    Spoon sauce over pork chops.
