• Beer and Bacon Beef Stew

    Ingredients

    • 3 slices bacon, diced
    • 3 large onions, chopped
    • 2 teaspoons brown sugar
    • 1 tablespoon apple cider vinegar
    • 3/4 teaspoons salt
    • 1/4 teaspoon black pepper
    • 1 tablespoon vegetable oil
    • 3 tablespoons all-purpose flour
    • 1 12-ounce bottle dark beer
    • 1 teaspoon dried thyme leaves

    Directions

    Step 1
    Preheat oven to 350 degrees. In a heavy casserole pot, brown the bacon. Remove from the pot to drain on paper towels. Add the onions to the pan and cook in the drippings over medium heat until they are very soft, about 20 minutes. Sprinkle the brown sugar over the onions and continue cooking for another five minutes. Add the vinegar, salt, and pepper to the pot. Stir and then transfer to a bowl.
    Step 2
    Place oil in casserole pot. Cook the stew meat in batches, browning on all sides. Return all the meat to the pan. Sprinkle with flour and cook, stirring, for another three minutes. Add back in the cooked onions and the bacon. Pour the beer into the pot and add the thyme.
    Step 3
    Cover the casserole pot and place in the oven. Bake for about 2 hours or until the meat is tender.
